9 Easy Ways To Reduce Food Waste This Christmas

Food waste is a real problem, and it’s not going away anytime soon. In the UK alone we end up throwing away 22% of our household food shop, which according to Olio, sets us back a whopping £700 each year. What many of us probably don’t realise is that a lot of this waste could be reused or recycled, and that leaves one big question: how can we all do our bit to ensure that we’re using our food wisely? After all, sometimes life gets in the way and things can go off or unused even in a well-planned fridge.

To help you reduce your food waste this Christmas and beyond, take a look at our tips below.

Food recycling
Certain boroughs in London recycle food waste through the weekly bin collections – but that’s not the case everywhere. Check your local council’s website to see if the same service is available to you. All you need to do is to pick up the liners from your council (these bags are compostable with the food and reduce the caddy odour), fill them with your food waste (everything from peelings to vegware compostable coffee cups), then leave the caddy out with your recycling every week. If your council doesn’t offer the scheme then why not try your own food recycling. Joseph & Joseph do a great countertop caddy that allows you to do the same – then use this compost for your plants or donate it to a community garden.

Dehydrating
Ever wondered how those kale chips are made? We’ll let you in on the secret: they’re dehydrated. If you’re often left with unused veg at the end of your week then this could be a great way to extend the life of your food. A standard dehydrator costs around £30-£50 then start getting creative. Simply slice up your unused veg (leftover parsnips or sprouts?) add a bit of oil and spices to taste then dehydrate for 12-16 hours till crisp. Alternatively, try blending any limp looking herbs with some nuts to make your own crackers. That way you extend the lifespan of your food and end up with something to dip into your hummus too.

Make surplus portions
Here’s a trick we can all achieve. Get yourself a good sturdy set of Tupperware and freezer bags! Making a meal that’ll see you through a few servings will save you time and effort as well as food waste. If you’ve got practical storage solutions then you’ll be more likely to work leftovers into your weekly routine. So whether you often cook for one or make big meals for the family, doubling up your portions will make your veg go further and get rid of any half-eaten peppers in the fridge – and give you a more wallet-friendly option for your work lunches too.

Plan your meals
It’s easy to get carried away buying everything that’s on offer on the weekly shop, but it’s more cost-effective and environmentally friendly to take time to plan out meals for the week. That way, you only buy for the nights you’ll be at home. Better still, it’ll likely give you the inspiration for new and exciting dinners too. If you shop online, you can create recipes on Ocado that are easy to add to your bag – simply add the ingredients to your bag and you’re good to go!

Make your freezer work harder
Your freezer is your greatest ally when it comes to combatting food waste. It’s especially useful at Christmas time… with so many (delicious) components to a festive feast, it’s easy to feel overwhelmed and frazzled at the amount of prep. You can use your freezer to store things like your Christmas spuds, desserts and even sides like red cabbage which you can make ahead of time and simply whack in the oven in the morning while you merrily sip on a glass of champers. The same goes for your weekly meals. Set aside Sundays as your prep day and whip up veg-loaded pasta sauces, curries, sweet potato fritters… the ideas are endless. Freezers aren’t just for smoothie ingredients you know!  

Use By dates
Obviously, it goes without saying to be careful with food that is out of date, but it’s still good to know the difference between Use By, Best Before and Sell By. Sell By dates refer to the date a shop cannot sell the product after but it doesn’t mean that products are unusable after this. Similarly Best Before dates are a guide – food can usually survive past this date. It’s wise to use your common sense here – be especially careful with meats, for example. Even if your vegetables are looking a little bit worse for wear they can still be used for stock or soups – just boil them with some herbs and whizz up in a processor.

Donate to food banks
Did you know that between April and September 2017, 586,907 three-day emergency food supplies were given to UK citizens in need? That’s a 13% increase on the same period last year, showing how important it is that we stop simply throwing food away. If you recognise that you’re not going to eat the contents of your fridge yourself, look to your local food bank to see if you can donate instead. In addition, most are on the lookout for tinned and dry goods that can be given to families in need – especially in the run-up to Christmas. Head to the Trussell Trust to find a local food bank or take your goods to a nearby supermarket like Tesco to donate to a good cause.

A Trichologist Shares Her Winter Haircare Rules

There’s every chance that you’ve diligently switched up your skincare routine by now. Perhaps you’ve retired your lightweight serums for richer creams, made nourishing face masks your mainstays and swapped fresh cleansing gels for nourishing oils – but have you paid your hair and scalp the same service? As an extension of your skin, your scalp is just as sensitive to temperature changes, indoor heating and the inevitable dryness synonymous with the colder months. Plus, it’s always as winter looms when our hair becomes brittle, it loses its natural shine and looks more lacklustre than it was in the height of summer. 

These are just a few of the reasons why switching up your hair routine is so important come winter. ‘As the seasons change, your hair changes too,’ trichologist Hannah Gaboardi, explains. ‘In the autumn and winter months, many will find their hair becomes dry, often leading to split ends and damage as exposure to the harsh cold elements and heating can take away some of our hair’s natural moisture,’ she stresses. From tending to your scalp to simple lifestyle changes, consider these the seven holy grail winter haircare rules to live by for healthier-looking lengths peak-winter.

Take care of your scalp

‘Healthy hair starts with a healthy scalp,’ says Gaobardi. ‘During summer, the sun dries out your scalp along with the hair shaft due to the increased sun exposure; UV rays penetrate the hair shaft at the roots causing damage to the scalp and structure of the hair, meaning it’s especially important to ensure your hair is nourished as we head into winter,’ she says. Treat your scalp as you do your skin with a targetted routine. An overnight treatment like Aveda’s Scalp Solutions Renewal Serum or Sisley’s Pre-Shampoo Purifying Mask will help eliminate impurities and add moisture back into the scalp. Meanwhile, look to ingredients like salicylic acid to exfoliate, squalane to nourish and hyaluronic acid to help lock in hydration.

Avoid heat styling

‘Using heat can damage the keratin proteins (important for the hair’s strength) taking away any moisture from the inside of the hair strand and damaging the cuticle of the hair,’ says Gaobardi. ‘This makes your hair super dry, damaged and brittle and you’ll find it snaps off more easily. I would always suggest limiting heat use where you can and always make sure to use heat protection,’ she adds. Retire your trusty tools and opt for heatless curls (like the Kitsch Satin Curling Set) or use a sea salt spray to add texture and volume without damaging your ends.

Load up on nutrients

Eating a well-balanced diet is key when it comes to hair health. ‘Oily fish is packed with Omega 3 fatty acids which help support growth; chia seeds work to stimulate new hair follicles and eggs are packed with proteins, minerals and B-complex vitamins helping to fight dryness,’ Gaobardi explains. Similarly, foods that contain iron and zinc (such as pumpkin seeds, cashew nuts, flax seeds, red meat, Quinoa and green vegetables) also help keep your hair looking and feeling healthy.

Try an at-home treatment

‘You also need to look after your strands topically to ensure they’re getting enough nourishment,’ she continues. Giving your hair a much-needed boost of hydration, a weekly hair mask helps lock in moisture and feeds your hair with essential nutrients. For a leave-in treatment, use a keratin care complex to restore lost protein, says Gaobardi. For a densifying leave-in treatment, she recommends Viviscal Elixir, which leaves hair looking thicker and shinier.

Take a hair supplement

‘I always stress the importance of taking an inside-out approach,’ says Gaobardi. Though your diet, stress levels and sleep play a significant role too, taking a daily hair supplement could help ensure you’re getting all of the right nutrients. As for the ones to look out for? Zinc, Biotin, Iron, collagen and B12 are all important for hair health, according to Gaobardi. ‘If someone’s B12 levels are low, hair follicles may not be able to grow new hair efficiently,’ she shares. 

Switch to a silk pillowcase

Did you know, that switching from a cotton pillowcase to a silk one can do wonders for your hair at this time of year? Think everything from minimising split ends to avoiding breakage and ensuring your hair stays nourished around the clock. During winter, silk actually helps lock in moisture. Unlike cotton, which is porous, a silk pillowcase keeps the hydration in our hair, making it look and feel less brittle.

Change your showerhead

Not too hot and not too cold – you want your shower temperature to be just right. But it’s not just the temperature of the water: if you’re living in a city, hard water can also take a toll on the health of your hair. That’s because the minerals penetrate the hair and then crystalise upon drying. Not only does this make your hair more prone to breakage but it can also stop your shampoo from lathering making your scalp more susceptible to product residue and dandruff. An easy solution is a purifying shower head, which helps minimise these impurities.


Chocolate Olive Oil Mousse

Extra virgin olive oil and dark chocolate make for a deliciously rich and bitter combination and a polyphenol-packed mousse. If you can, use a good-quality fruity olive oil to take this to the next level. We’ve used aquafaba from a tin of chickpeas instead of egg whites; next time you use some in a recipe, keep the liquid and store it in the freezer for desserts like this.

INGREDIENTS – Serves 4

100g dark chocolate (at least 70% cocoa solids), broken into pieces

2 tbsp extra virgin olive oil, plus extra for drizzling

2 tsp maple syrup 1–2 pinches of salt 140ml aquafaba (liquid from a tin of chickpeas at room temperature)

70g hazelnuts, toasted and roughly chopped

150g cherries (fresh or frozen), stoned

Top-up

Crème fraîche

Chopped hazelnuts

Swap

Honey for maple syrup

METHOD

1. Place a heatproof bowl over a saucepan of simmering water and slowly melt the chocolate (make sure the bowl does not touch the water). When ready, remove from the heat and add the olive oil, maple syrup and a pinch of salt. Mix to combine.

2. Put the aquafaba in the clean, grease-free bowl of a KitchenAid stand mixer fitted with the whisk attachment and whisk for about 5 minutes, or until it forms stiff peaks.

3. Stir a spoon of the aquafaba into the chocolate mixture and then add the chocolate mixture to the whisked aquafaba. Use a metal spoon to gently fold the mixture together – don’t beat it or you will lose the airy texture.

4. Spoon into four small glasses and refrigerate for at least 1 hour. Top with cherries, an extra drizzle of olive oil and a pinch of salt.

10 Ways to Prep Your Gut and Liver for the Festive Season

With Christmas just around the corner, we’ve enlisted The Club by Bamford’s Resident Nutritionist, Rhaya Jordan, to share her top 10 tips for showing your liver some love so you can give your body a health advantage before the festive season really kicks off!

Clinking tall glasses of chilled bubbles, indulging in fine wines alongside rich foods, quaffing cocktails at all times of day and night, passing around nips of whisky on winter walks – the festive season can be a bacchanalia of alcoholic drinks. Chances are you may get a little carried away at least once.

We would never deny you the pleasures of your chosen tipple but as ever, balance is key for wellbeing. Essentially, the goal is to cycle in and out of partying and resting your body.

All the liquid merriment can take its toll on your liver, a life-giving organ that many cultures believe is intimately associated with the very essence of a person. In naturopathy, the liver and gut are considered to be the foundation of wellbeing.

Here are ten great ideas to help protect this essential body part from too much boozy excess and help you eat, drink and be merry – and balanced!

Hydrate
Hydrate with fluids that aren’t alcohol – water, mint tea, green tea are your best friends over the party season. Make it a rule that you will not step out of your front door until you’ve downed a large glass of water – even if you are standing in cocktail dress and heels, ready to go! 

Sneak in goodness
Incorporate delicious, liver-friendly food into party food and general cooking ahead of the Christmas season. Artichoke hearts blended until smooth with olive oil is a fantastic dip, for example. Choose things like savoury spelt biscuits, charcoal crackers and crudités over white crackers, crisps or cheese straws. 

Pile on the protein
You can enjoy high-quality proteins as delicious canapés and finger foods at parties. Things like devilled eggs, smoked salmon, seafood and shellfish provide fabulous nutritional benefits and substantially cut calories all while remaining luxurious and satisfying.

Watch for sugar
If you are going to have sugar, you should know about it and therefore embrace it as a treat in decadent puddings and desserts. What you should look out for is white sugar hidden in everyday dishes that are not immediately obvious, such as processed tomato sauces. Try to ditch unnecessary added sugar in savoury foods.

Eat without sacrifice
You can still eat sweets which feel incredibly celebratory without punishing your liver with excess sugar and calories. Gelatin is high in collagen which is soothing to the gut and rich in protein. Try making jellies in a martini glass with blood orange, pomegranate seeds and gold leaf for a stunning, festive pudding

Be selective
Say ‘no thank you’ to industrially-made, processed festive food; eat only the best mince pies made with real butter and plenty of dried fruit. Whatever you eat has got to be worth the calories as Pru from Bake Off says!

Give yourself a break
On days you don’t have anything in the diary and are not going out, enjoy foods like chicken bone broths, light lemongrass-y soups, juices and winter salads to give your body a break. Have a couple of vegetarian days throughout the week; experiment with recipes to enjoy seasonal vegetables e.g. roasted with a miso glaze.

Salad days
You may associate salads with warm summers but you can easily adapt dishes to suit colder winter weather and seasonal ingredients. A good salad dressing is a wonderful remedy and boost for the body: olive oil is rich in beneficial phenolic compounds that can help you body mend some of the Christmas carnage.

Embrace the five flavours
Much festive food is sweet and salty but don’t forget about sour, bitter and umami flavours. These add interest and balance to food and can help you feel lighter. Bitter and sour send messages to your liver to increase its detoxification enzymes

Eat the rainbow
Deep, vibrant pigments are magnificent tonics for the liver. If your diary is a whirl of parties, make sure your plates, bowls and glasses are bursting with colour.

A Pescetarian Christmas Recipe For Your Festive Feast

Salmon en Croûte

I created this recipe for my appearance on UK TV show The Great British Bake Off’s ‘The Great New Year Bake Off 2023’, and everyone loved it! I made a slightly different version for the book and tested it with my family as a celebration meal, and they really enjoyed it. It looks fancy and complicated, but it isn’t. Let’s impress your guests together!

INGREDIENTS – Serves 6

1 large whole salmon fillet

400g (14oz) smoked salmon

1 bunch of fresh spinach leaves

500g (1lb 2oz) ready-made shortcrust pastry

a little plain (all-purpose) flour for dusting

1 egg, lightly beaten

For the filling

1 shallot

1 bunch of dill

1 bunch of parsley

2 tbsp capers

zest and juice of 1 lemon 240g (81/2oz) cream cheese

METHOD

Preheat the oven to 190°C fan (200°C/400°F/gas 6).

To make the filling, you can use a food processor or finely chop the shallot, dill, parsley and capers. Then add the lemon zest and its juice, then finish with the cream cheese. Set aside in the fridge.

To prepare the salmon fillet, use a sharp knife to remove the skin, cutting between the skin and the salmon as close to the skin as possible, pulling the skin aside. Slice the fillet lengthways from the middle, but only cutting to three-quarters on the inside, leaving 1–2cm (1/2–3/4in) of fillet still attached. Set aside.

Lay some clingfilm (plastic wrap) on your worktop and shape the smoked salmon into a rectangle in the middle. Top it with the salmon fillet, opening it up to create a large rectangle.

Spread the filling on top of the salmon, then gently roll just the salmon and the filling together, and use the clingfilm to help you cover the roll neatly with the smoked salmon. Twist the clingfilm to tighten the roll. Keep in the fridge for 15 minutes.

Flour your worktop then use a rolling pin to roll the pastry into a large rectangle 2–3mm thick. Remove the roulade from the clingfilm and place it in the middle of the pastry.

Brush some beaten egg on the pastry to help the layers to stick together, cut off the excess pastry and close the roll around the salmon roulade.

You can use some cutters to decorate your roulade with the leftover pastry, or simply use scissors to create little spikes on the surface.

Brush the pastry with the remaining beaten egg. Cook for 20–25 minutes, or until golden.

Serve with a Beurre Blanc (White Butter, page 191) and the Gratin de Poireaux (Cheesy Grilled Leeks, page 170).

Hangovers—those dreaded aftermaths of festive indulgence. They can feel downright awful and, during the holiday season, seem almost impossible to avoid. This time of year, more than any other, the abundance of alcohol flows freely, becoming an almost inevitable part of social gatherings.

From raising a toast with colleagues to celebrating with family or enjoying dinners with friends, alcohol often takes centre stage at these events. But what if you choose not to drink—or simply can’t? Fear not! Wellness writer Charlotte Dormon is here to share her five tried-and-tested non-alcoholic favourites that let you join the festive fun without the hangover.

I am a wellness-conscious woman in my 40’s. I spend most of my days writing about well-being and working with health and wellness brands. And when I’m not working, I usually spend a lot of my time doing things that are good for my well-being, such as yoga, long walks, fitness classes and cooking healthy meals.

I am also a morning person and love to get up early to enjoy my weekends to the max, especially doing stuff I enjoy in the mornings – like yoga classes or brunch out. 

When I was in my late 30’s and realised that alcohol was basically wiping out hours of potential happiness I could be having due to the hangovers I was having to ‘deal’ with on a Saturday or Sunday, I just one day had a sharp awakening that this was not the life I wanted to live my life anymore.  

Was I pregnant, an alcoholic or a bad drunk?

No, I was non of these things, which is why when I decided to give myself a break from alcohol, it did not seem to be well received by others and usually involved a lot of explaining along the way. As I was not pregnant, a bad drunk or have the ‘issues’ one might have with alcohol, most people wondered why on earth I would want to avoid this ‘fun’ drink.

For me, it was simple. I didn’t want to waste the precious time I had by feeling rubbish.  I wanted to still be social and enjoy my life but not miss out on my yoga class on Sunday morning instead of popping painkillers to reduce a headache. I also wanted to not wake up every few hours with my heart racing and feeling anxious due to the few glasses of fizz I’d had on a night out – really, is that worth it?  

I really never drank that much when I went out, but it seemed that all my hard work on eating well and looking after my health was just all wasted from the hangovers I got from alcohol I consumed on my office nights out, parties and events. So I chose to commit to going alcohol-free to see how it would help me. 

Did it help, and if so, what benefits did I find? 

Where to even start on this one? WOW, the benefits were endless, from being able to pay off a £2k credit card debt thanks to saving so much money by not buying alcoholic drinks and the inevitable Uber trips home. I was also single at the time, so I found myself not ending up doing things I regretted the following day after going on a date.

When it came to my mental and physical health, that was really a big shift. I was already taking care of my health overall, but the days that followed after drinking left me feeling unbalanced emotionally, often struggling with hangxiety! And, of course, you end up eating foods that you probably wouldn’t have due to the blood sugar sabotage caused by rubbish sleep and too much sugar in the alcohol upsetting your hormones. So when I gave up, all these negative side effects went. I was feeling happier than I ever had. My waistline was almost as toned and trim as it had been in my 20s, and my skin looked radiant and hydrated all time time.   

What to drink when your not drinking? 

Okay, so I am not going to lie here. There were times when it was super tough to find anything that would be as good as a glass of prosecco or champagne. I often had to say “I’ll just have sparkling water, cheers” through gritted teeth as I was so fed up with not being able to get anything that even slightly resembled a nice drink as an alternative. Alcohol-free beers were very easy to come by overall, and I enjoyed a few of them, but when going to friends’ houses for dinner, heading to a party, or turning up to a celebratory event, you really wanted to have a cold glass of fizz along with everyone else.  

So what did I do? I made it my mission to find some delicious alcoholic alternatives that wouldn’t give me a hangover. I searched high and low to find the very best alcohol-free drinks so I could come armed turning up to friends’ houses and ordered as many bottles as I could so I could taste them and work out which ones looked great and which tasted great.   So much so that eventually, people who were actually drinking were asking me to share my discoveries as they also wanted to try drinking less and seemed as impressed as I was with my fizzy finds. 

In no particular order, here’s my favourite selection of fizz for you to enjoy this season so that you can wake up with that super smug feeling that you don’t have a hideous hangover, and boy, does that look and feel great!

Carl Jung Organic Mousseux
