We’ve previously introduced you to the Mindful Chef, the fresh food delivery business, and Zanna van Dijk, personal trainer, blogger and co-founder of the #girlgains movement. But have you heard about their recent collaboration: the Zanna X Mindful Chef Vegan collaboration? If not, then we’re here to get you excited about it…

 

From the end of this week, for four weeks, Mindful Chef customers will be able to order and enjoy vegan dishes devised by Zanna herself. Despite offering meat and fish recipe boxes, the Mindful Chef fully encourages its customers and followers to include more vegetables in their diet, alongside their advice to reduce gluten intake and avoid refined sugars and refined carbohydrates, to ensure maximum nutrition and goodness! Zanna’s largely plant-based diet embodies this approach to food, favouring meals that are the fresher and healthier versions of the classic dishes we already love, by using nutritious and locally-sourced ingredients – things that are just as highly valued by the Mindful Chef. Naturally, this partnership seems like a match made in heaven, and we’re excited to try the four recipes which include ‘Asian peanut stir-fry with buckwheat noodles’ and ‘Spinach, tomato and chickpea curry’.

 

These Zanna X Mindful Chef recipes channel their shared ethos that you don’t need to include meat in every meal to enjoy a healthy and balanced diet that is also exciting, filling and easy! Having just completed a two-week vegan challenge, Zanna enthuses that being a vegan encourages you to think outside the box, to experiment with new ingredients and, happily, it is much easier than you think. Lucky for you, with the Mindful Chef collaboration delivered straight to your door, you have to think even less about it!
