Enjoy the vibrant flavours of summer with this BBQ Summer Grilled Peach & Burrata Salad. This refreshing salad combines the sweetness of grilled peaches with the creamy richness of burrata, perfect for a light and delicious side dish to enjoy as an accompaniment to your BBQ feast.

INGREDIENTS

2 peaches, ripe but firm, destoned and halved

The Groovy Food Company Organic Extra Virgin Olive Oil Cooking Spray

2 handfuls rocket

6 slices of your fave serrano ham

1 ball fresh burrata

a small bunch basil

2 tbsp of toasted pine nuts

Crusty bread to serve

Dressing

3 tbsp The Groovy Food Company Organic Extra Virgin Olive Oil Cooking Spray

2 tbsp white balsamic vinegar

1 tsp runny honey

1finely chopped red chilli

½ a clove garlic

Method

First, make the dressing by whisking together the Olive Oil Cooking Spray, vinegar and honey in a bowl before stirring in the chilli and garlic. Leave to rest while you prepare the rest.

Heat a griddle pan and brush the peach halves with the Olive Oil Cooking Spray, then griddle until caramelised on the surface.

Scatter a platter or large bowl with the rocket, then place the serrano ham on top. Place the peaches on the platter and pour the dressing over everything. Scatter over the basil and pine nuts and serve alongside the crusty bread.
