Healthy Recipe for the Weekend: Raw Pad Thai



Serves 4


6 courgettes

3 carrots

1/2 cup tomatoes, diced

5 stalks asparagus, cut thinly

1 cup/ 100g sugar snap peas, cut thinly

Method: Spiralize the courgettes and carrots with a spiralizer if you have one or julienne them with a peeler if you don’t!


1 cup coconut milk

1/3 cup almond butter

3 medjool dates

juice 1 lime

2 garlic bulbs

1cm cube ginger

2 tbsp tamari

Method: Blend all ingredients together until smooth.

Teriyaki Almonds

1/3 cup almonds

1 tbsp tamari

1 tbsp water

Method: Preheat the oven to 180 degrees. Combine water and tamari and coat the almonds well. Roast in the oven for 2-3 minutes, until liquid has dissolved.

And to finish: Finally place all prepared vegetables and almonds in a large mixing bowl, pour sauce in and toss well.
