Ingredients 

2 cups of quinoa (cooked)

3 tbsp of capers

1 handful of pecans

i bug handful of parsley

1 red bell pepper (diced)

1 bunch of arugula leaves

1/2 cup of cranberries

 

Dressing:

1/3 cup of cold pressed organic olive oil

1/4 cup of organic apple cider vinegar

1 tbsp lemon juice

1 tbsp mustard

1/2 tsp cumin powder

1/2 tsp turmeric

1/2 tsp coriander powder

1/4 tsp cardamon

1/4 tsp cinnamon

1/4 tsp nutmeg

 

Method

Cook the quinoa for 15 minutes and let it cool off. Once cooled, combine with all the other salad ingredients and the dressing sauce. Finally scatter the capers and cranberries! It’s as easy as that!
