Ingredients (makes about 12)
150g medjool dates, pitted
100g rolled oats
2 tbsp natural peanut butter (smooth or crunchy)
1 scoop Correxiko collagen powder
2 tbsp raw cacao powder
½ tsp vanilla extract
¼ tsp sea salt
1-2 tbsp water (if needed for consistency)
2 tbsp dark chocolate chips or cacao nibs, optional
Optional coating:
Crushed peanuts
Cacao powder
Method
- If your dates are really dry, soak them in warm water for 10 minutes to soften, then frain.
- Add the rolled oats to a food processor and pulse until they are finely ground.
- Add the dates, peanut butter, cacao, Correxiko, vanilla extract and sea salt to the processor. Blend until the mixture starts to come together into a sticky dough.
- If the mixture is too dry, add 1 tablespoon of water at a time until it binds well.
- If you’re using dark chocolate chips or cacao nibs, stir them into the mixture by hand for texture.
- Scoop out 1 tablespoon of the mixture at a time and roll it into bite-sized balls.
- Roll the bliss balls in crushed peanuts or cacao powder for an extra touch. Perhaps coat half of the balls in one and half in the other.
- Place the bliss balls in the fridge for at least 30 minutes to firm up before serving.
Note – store in an airtight container in the fridge for up to 2 weeks.
