Ingredients (makes about 12)

150g medjool dates, pitted

100g rolled oats

2 tbsp natural peanut butter (smooth or crunchy)

1 scoop Correxiko collagen powder

2 tbsp raw cacao powder

½ tsp vanilla extract

¼ tsp sea salt

1-2 tbsp water (if needed for consistency)

2 tbsp dark chocolate chips or cacao nibs, optional

Optional coating:

Crushed peanuts

Cacao powder

Method

  1. If your dates are really dry, soak them in warm water for 10 minutes to soften, then frain.
  2. Add the rolled oats to a food processor and pulse until they are finely ground.
  3. Add the dates, peanut butter, cacao, Correxiko, vanilla extract and sea salt to the processor. Blend until the mixture starts to come together into a sticky dough.
  4. If the mixture is too dry, add 1 tablespoon of water at a time until it binds well.
  5. If you’re using dark chocolate chips or cacao nibs, stir them into the mixture by hand for texture.
  6. Scoop out 1 tablespoon of the mixture at a time and roll it into bite-sized balls.
  7. Roll the bliss balls in crushed peanuts or cacao powder for an extra touch. Perhaps coat half of the balls in one and half in the other.
  8. Place the bliss balls in the fridge for at least 30 minutes to firm up before serving.

Note – store in an airtight container in the fridge for up to 2 weeks.
