A zesty twist on a classic make-ahead breakfast recipe, these lemon and blueberry overnight oats by Alpro can be prepped overnight or left for an hour in the fridge.

INGREDIENTS – Serves 1

 45g rolled oats

10g chia seeds 

200ml Alpro Soya No Sugars drink, plus extra to loosen before eating, if needed

140g Alpro Greek Style Plain plant-based alternative to yoghurt

½ tsp vanilla extract 

Zest of one lemon

30g blueberries

Optional: 1-2 teaspoon maple syrup

METHOD

  1. Combine all of the ingredients in a jar or bowl and give it a good stir. 
  2. Store in an airtight jar or container. 
  3. Leave in the fridge overnight (or for at least an hour). 

Top tip: you can double the recipe to batch prep for the week. Either portion out the mixture into airtight jars or store in a large container to serve into bowls later.
