Salad:
6 cups/ large handfuls Kale
1 red pepper, chopped
Seeds 1/2 pomegranate
1 avocado, cubed
Handful of your favourite nuts, raw or lightly toasted (we love pine nuts)
Dressing:
1/4 cup dried figs
1 tbsp balsamic vinegar
1/4 cup olive oil
Juice 1/2 lemon
Salt & Pepper to taste
Method
If the figs are to hard to blend, soak them or boil them for 60 seconds until they become soft and juicy. Add them to the blender with all other ingredients for the dressing. Blend until smooth. Now for the super simple salad part. Place the kale in a large mixing bowl. Add the dressing and with your hands slowly massage it into the kale for 2-3 minutes.This allows the kale to wilt. Add in all other salad ingredients. Toss it all together and dig in!
