A green and colourful take on the classic traditional dish, this Green Shakshuka makes a perfect brunch option that’s cosy, warm and nourishing.
INGREDIENTS – Serves 2
1 tablespoon coconut oil
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon coriander
1 green pepper
1 leek
1 white onion
2 cups of spinach
1 can of butterbeans
2 tablespoons coconut yoghurt
Serve with a choice of sourdough or broccoli bread and optional feta (dairy free)
METHOD
Method:
Chop all your vegetables into slices
In a large frying pan, heat your coconut oil and add your spices for 1-2 minutes
Once your spices have cooked, add your chopped leek, spinach, butterbeans, and onion and coat with the spices and herbs
Once cooked, add a splash of water and leave to simmer for 5-10 minutes
Sprinkle your crumbled feta on top and serve in a deep plate a slice of crusty bread and a dollop of coconut yoghurt
