A classic gimlet is made with vodka or gin, lime juice, and simple syrup. This take is heavy on the citrus with a touch of garden thanks to a chamomile-infused simple syrup. Not only is it floral, but it also has a calming effect and can promote relaxation and rest. Think bedtime tea, but a little more fun and a lot more delicious. You can opt to add in an ounce or two of zero- proof vodka or gin if you’d like, for a more authentic taste.
INGREDIENTS – Serves 1
Ice
Juice of 1 lemon
Juice of 1 small grapefruit
1 to 2 teaspoons Coconut Sugar Simple Syrup (page 123), made with chamomile, or to taste
2 ounces nonalcoholic vodka or gin alternative, optional
Sparkling water
Fresh chamomile flowers, for garnish
METHOD
Place ice in a cocktail shaker or glass jar with a lid. Pour in
the lime juice, lemon juice, grapefruit juice, chamomile syrup, and zero-proof vodka or gin (if using) and vigorously shake
to combine. Strain into a glass with fresh ice, top off with sparkling water, and garnish with fresh chamomile flowers and a slice of lime, if you like.
