We’re all about #meatfreemonday (and maybe a few other meat-free days too!) so today, we’re sharing this glorious Jackfruit Tacos recipe from Social’s Pantry’s Alex Head. Now, if you haven’t heard of Jackfruit before, then let us explain, as it might sound odd to put fruit in a taco!

This spikey-looking fruit originated in India and Bangladesh but is now also grown in Southeast Asian countries such as Thailand and Malaysia. Its recent rise in popularity can be put down to its meaty-like texture. Many recipes such as curries call for Jackfruit to replace meat and many agree it has a similar texture to pulled pork. So, if you’re looking to spice up your veggie meals, try jackfruit as a delicious alternative! For now, over to Alex and her tacos!

Ingredients – Serves 4

1 can, green jackfruit in water or brine, drained, rinsed and cut into thin long slices

1 small onion, thinly sliced

1 tsp chilli powder

1 tsp cumin

1 lime, juiced

150ml water

Flour or corn tortillas

Salt and pepper

Coriander for garnish

For the salsa:

1 avocado, smashed

¼ red onion, finely diced

½ red bell pepper, finely diced

1 tbsp jalapeño, finely diced

1 tbsp chopped coriander

1 tbsp chopped mint

½ lime, juiced

Salt and pepper

 

Method

First, make the taco filling. Sauté the onions in oil until translucent, roughly 6 minutes.

Next, add the jackfruit followed by the chilli powder, cumin, lime juice and water. Cover and simmer for about 5 minutes.

Once the jackfruit has softened, shred using two forks or cut into strips. Season with salt and pepper to taste.

Make the salsa by combining all the ingredients together, season to taste and build the tacos.

Serve on a gorgeous plate and encourage your guests to get stuck in!
